Paleo-Friendly Cheesy Brussels Sprouts
This recipe easily takes the cake for our favorite side dish no matter what the meal is; breakfast, brunch, lunch or dinner. AND the fact that this recipe takes less than 15 minutes to make just makes it that much better.
There are so many different ways I enjoy making brussels sprouts [including these Maple Bacon Brussels Sprouts & this Shredded Brussels Sprouts Salad] but for the past year, this cheesy side dish has been a top request not only at our house but with my extended family as well.
Whether you love brussels sprouts or not, whether you’re familiar with nutritional yeast as a substitute for cheese or not… I have no doubts that you’ll enjoy this recipe just as much as we do. Be sure to grab the few ingredients you might need next time you’re at the grocery store so you can add this side dish to any meal next week.

PALEO-FRIENDLY CHEESY BRUSSELS SPROUTS
Servings: 6-8
Ingredients:
16oz Raw Brussels Sprouts, sliced
¼ Red Onion, diced
½ C. Full Fat Coconut Milk
⅓ C. Nutritional Yeast
2 Tbsp Avocado Oil [or other cooking fat]
S & P to taste
Methods:
Heat a large skillet to medium heat
Add avocado oil to skillet
Once the oil is hot add onion and a pinch of salt, cook for 3 minutes
Next add in the brussels sprouts and continue to cook for 6-8 minutes [or until the brussels start to soften]
At this point you can add in the coconut milk & nutritional yeast, stirring constantly to ensure everything is mixed well
Serve alongside brunch or dinner -- you really can’t go wrong with either
