Healthy Oatmeal Raisin Breakfast Cookies

Not only are they the quickest grab and go breakfast but also a nutritional option when time is of the essence and what’s more?!?! If you’re really short on time, you can skip the egg and the oven all together and turn these into [No Bake Oatmeal Raisin Energy Balls] -- yes way!

It’s about time for a new blog I suppose. And as I sat down to write this up with exactly 24% battery left on my computer (how’s that for some external motivation) I realized that I’m actually on a HOT streak -- which in my case means that I’ve published exactly one blog a month for the past 6 months -- but nonetheless, a HOT streak! If that’s not some consistent shit, then idk what is. Good thing I have a full time job dumping (more like lobing) paychecks into my bank account every 2 weeks because publishing a non-sponsored post 12 times a year quite truthfully isn’t getting me any closer to freedom from my student loans.

And while I could sit around and crack jokes about my inconsistency all night, the real reason you’re here is because of a bomb.com recipe I created that (although it’s nearly Thanksgiving) has nothing to do with turkey or mashed potatoes or stuffing, rather it has to do with the fact that holidays bring about INSANE schedules and can be very, very difficult to make healthy & real foods a priority. 

I know you have 18 events to go to in 4 different states all within the next 5 weeks, I feel you… I really do. And while my first instinct says that maybe you can’t see everyone every single holiday because… Mental Health, I’m also the person encouraging you to go because you never ever know how many more opportunities you have to spend quality time with your loved ones. 

And that’s exactly why I created these [Healthy Oatmeal Raisin Breakfast Cookies] and am sharing them right here, right now. They not only can be the quickest grab and go breakfast but also a nutritional option when time is of the essence and what’s more?!?! If you’re really short on time, you can skip the egg and the oven all together and turn these into [No Bake Oatmeal Raisin Energy Balls] -- yes way!

My best advice of the holiday season is to make yourself a triple batch of these (at least) and toss the majority of them in the freezer. That way, when you’ve got wrapping paper, ribbons, cookies, milk and the rest of your holiday traditions strewn throughout your life, at least you’ll have a healthy breakfast option for you and your loved ones.

HEALTHY OATMEAL RAISIN BREAKFAST COOKIES

{Printable Recipe}

Servings: 12-14 cookies // 18-20 balls

Ingredients:

  • 1C. Quick Oats 

  • 1C. Cashews, Raw

  • ½ C. Walnuts, Raw

  • 5 Dates, pitted 

  • ½ C. Almond Butter 

  • ¼ C. & ¼ C. Raisins 

  • 2 Tbsp. Chia Seeds 

  • 1 Tbsp. Cinnamon 

  • 1 Tsp. Vanilla 

  • 1 Tsp. Sea Salt

(For The Cookies)

  • 2 Eggs 

  • ¼ C. Almond Milk 

  • 1 Tsp. Baking Soda

Methods:

  1. Preheat oven to 350 degrees Fahrenheit (if making cookies)

  2. In a medium bowl combine the following ingredients: oats, half the raisins, cinnamon, sea salt, vanilla & chia seeds -- then set aside.

  3. Add remaining ingredients (including eggs,  baking soda & almond milk if making cookies) to a food processor & blend until well mixed.

  4. Once complete, empty the contents from the food processor into the bowl with the oat mixture and combine together with your hands. 

  5. For Balls: Roll into small balls and store in the refrigerator or freezer

  6. For Cookies: Roll into small balls then slightly flatten onto pan & bake for 10-12 minutes

  7. Try not to eat them all in one sitting;)
