Paleo Snack Mix

I do apologize for the extended leave from the blog, but the hustle & bustle of summer has really gotten the best of me. Between all of the bachelorette parties, baby showers, and weddings it’s hard to find time to check off everything on my ‘to-do’ list. Did I mention that we moved and are far from unpacked? Oh well, life happens:)
For todays blog post I have 1 word for you… SNACKS. I’m pretty sure I love snacks more than most things in this world. Seriously though the bedtime snack tradition when you’re little… well that still applies in my everyday life. At this point it’s a habit and I truly don’t know if I can break it. For a very long time my nightly ‘treat’ was a green apple, some Justins Almond Butter, and celery stalks. Now, I like celery just as much as the next person but sometimes when all you want is something salty, sweet, or a combination of both it doesn’t quite satisfy the craving. So, instead of reaching for the bag of vegetable oil soaked chips or cookies laden with artificial colors and modified cornstarch, I knew there had to be an alternative option.
Luckily, after a few months of recipe tweaking and many, many trial runs Mr. Austin Schachtner & I have come up with what we refer to as ‘Paleo Crack.’ Why you ask? Because once you start, you can’t stop… it’s that good. This mix is not only made with natural, non-processed, whole food ingredients but it is more addicting than buttered popcorn at the IMAX. I bring you… Paleo Snack Mix.
PALEO SNACK MIX
Ingredients:
2C. Unsweetened Banana Chips
1C. Raw Pecan Halves
1C. Raw Cashews
2Tbsp. Coconut Aminos
1Tbsp. Apple Cider Vinegar
1Tbsp. Extra Virgin Olive Oil
1Tsp. Garlic Powder
1Tsp. Onions Powder
1Tsp. Black Pepper
1Tsp. Sea Salt
Methods:
In a small mixing bowl combine all liquid ingredients (EVOO, ACV, & coconut aminos)
In a 2nd (larger) bowl combine all dry ingredients excluding the spices
In a 3rd bowl add all of the spices & mix well
Drizzle the liquid ingredients over the "dry" bowl, adding seasonings as you stir
Line a baking sheet with parchment paper and spread a thin layer of the mixture over it
Bake at 350 degrees for 10-15 minutes, checking frequently
Allow the mixture to cool thoroughly, then store in an air-tight container
This is the absolute perfect snack for any occasion, dig in!:)
