Buffalo Chicken Salad Wraps
A nutritionally sound and satiating summertime lunch or dinner option in under 10 minutes.
Summertime is officially here and I could not be more excited! Even though the weather doesn’t look like it’s going to be too summer-y this weekend, I’ll still take it, because today marks the start of the first weekend in almost 6 months that I haven’t spent the majority of my time preparing to move, moving, unpacking, or renovating our new home! We actually have the freedom to relax, spend our time doing whatever we feel like and definitely NOT step foot in a single home improvement store.
Last Saturday we invited all of our closest friends and family over for a backyard BBQ in celebration of our 1st home and all of the work that went into it {so far}. Although we’ve been working on this house since only hours after we closed on it {literally}, we still ended up pulling a few all-nighters last weekend and working until minutes before our guests arrived in order to add the finishing touches. In 3 months we did a complete bathroom remodel, knocked out a wall and closet that separated the kitchen from the living room, painted the entire house and all of the woodwork, built a breakfast nook, installed ceiling lights in all of the rooms and landscaped the backyard. Woof. Just saying that all makes me exhausted.
The reality of the matter is that although I say “we,” this renovation wasn’t exactly an even 50/50 split. I basically designed our whole house {aka showed Austin what I wanted it to look like via Pinterest} but he’s the one who made it all come to life. I can landscape, paint, decorate, cook and clean, but when it comes to tearing out bathtubs, building walls and wiring lighting fixtures… I’m not much help. We definitely appreciate all of the extra help from many family members along the way, but again, if it weren’t for Austin, my dreams of buying a fix-er upper home and making it our own would have quickly turned into owning an old rambler still in the exact condition that the elderly lady before us had left it--yellow kitchen, green bathroom and all.
Anyways, back to summertime. If you’re like me, when the weather finally warms up here in MN you want to spend every possible minute you can outside and that doesn’t leave a large desire to spend time in the kitchen cooking up healthy meals. That’s why instead of letting my nutrition go down the drain all summer long, I have a few summertime staple recipes that I can whip together super fast and get right back to enjoying the weather.
Smoothies are my go-to summertime breakfast because I can toss them together the night before in under 5 minutes and grab it on my way out the door in the morning and wraps are my go-to dinnertime meal! I don’t eat grains or gluten, so bread is out for me, but I switch it up between romaine hearts, butter lettuce or even bell peppers to make myself a wrap or sandwich complete with a healthy fat {avocado or homemade mayo}, a minimally processed protein {chicken breast, applegate deli meat, etc.} and ALL of the veggies {greens, carrots, tomatoes, pickles, cucumbers, onions, etc}. Another super easy option is to make a large batch of tuna or chicken salad and top your wrap {or fill your pepper-sandwich} with it all week long. Minimal time, minimal mess, yet still nutritionally sound and more than satiating---definitely my kind of meal.
Speaking of… todays recipe fits that exact criteria! I’m sharing one of my favorite wrap styles, my Buffalo Chicken Salad Wraps, just in time for you to make them a regular occurrence on your summertime menu. So grab your bike, hiking boots or kayak because dinner’s going to be quick tonight!
BUFFALO CHICKEN SALAD WRAPS
{Printable Recipe}
Ingredients:
· 3-4C. Chicken Breast, cubed
· 1C. Mayo
· 1 Head of Butter Lettuce
· ½ C. Bleu Cheese Crumbles
· ½ C. Celery, diced
· ¼ C. Green Onions, diced
· 2 Tbsp. Franks Red Hot
· 1 Tsp. Onion Powder
· S&P to taste
Methods:
1. Combine the mayo, franks red hot, onion powder, S &P in a small bowl and mix well
2. Add the chicken bleu cheese, celery and onions into a medium sized bowl, the fold in the mayo mixture
3. Once well combined, spoon the mixture onto your lettuce leaves
4. Enjoy!
*Option to refrigerate mixture before serving.
