This dairy free smoothie is filled with fruits, veggies, protein and healthy fats and is a one stop shop for a nutrient dense breakfast that can be made in under 5 minutes!

I can’t even wrap my head around the fact that Memorial Day Weekend is already here---where did the time even go?! As summer really starts to take shape here in Minnesota, there is a ton to look forward to; camping trips, hiking, bike rides, rooftop patios, nice long, warm days and last but not least, S M O O T H I E S.

I am not a big fan of smoothies throughout the colder, winter months {basically because I’m a huge baby in the cold and am already constantly freezing} but let me tell you, when spring/summer roll around… smoothies are my jam! I love that I can just blend one up quick before work, pour it into a mason jar {always} and head out the door with a super healthy, quick breakfast in hand. Another reason I really like smoothies is because you can literally pack so much nutrition into 1 simple, grab ‘n’ go meal. Don’t get weirded out with this list, but some of my very favorite smoothie ingredients include: sweet potatoes, cauliflower, kale, spinach, avocado, coconut oil and more spinach. These don’t sound like the typical ingredients for a smoothie, but I promise that once you add in some fresh or frozen fruit you can’t even taste the vegetables at all! Besides fruits and veggies, I also make it a point to make sure I add a few scoops of collagen peptides for protein, gut health and strong hair, skin and nails and a healthy fat {avocado, coconut oil, nut butter, etc.} to make sure that my blood sugar doesn’t spike and leave me feeling HAN-gry an hour after finishing my smoothie.  And finally, the last reason I love smoothies is because you get to be creative with them in so many aspects. From the ingredients you’re putting in the blender, to the toppings you may place on top, to the time of day you’re consuming it… no smoothie is ever the exact same, which makes it much more exciting!

I’ve got a few favorite smoothies like my Paleo Pumpkin Spice Smoothie or Easy, Delicious Green Smoothie that are always in my back pocket when I don’t have as much time to be creative and ever since the day I first created this recipe, I knew it needed to be added to the card! The flavor is one of a kind and it honestly keeps me fueled for hours, which stops me from worrying about my next meal at 9am and allows me to fully focus on whatever it is that I need to get done that day.

So grab that blender, roll up your sleeves and get ready to make your new favorite smoothie!

PUMPKIN BERRY POWER SMOOTHIE

Ingredients:

·       1C. Mixed Berries, frozen

·       1C. Almond Milk, unsweetened

·       ¼ C. Pumpkin Puree

·       ¼ of an Avocado

·       2Tbsp. Vital Proteins Collagen

Methods:

1.     Add everything to a blender or food processor

2.     Blend until smooth

3.     Top with fresh berries, hemp hearts, bee pollen or your favorite grain free granola

4.     Enjoy!
