Buffalo Bleu Cheese Frittata

It’s been a bit since I’ve posted a new recipe on here and I apologize for that, BUT I feel like I do have a semi-valid excuse for the decreasing amount of new recipes lately. Quite a few years ago, back in my pescatarian {non-meat eating} days buffalo wings were never, not once a craving that I ran across. However, now that I've been back on the good side {meat eating} I find myself frequently craving wings constantly, but even more, I'm always craving Frank's red hot!
Seriously, I put that stuff on everything from chicken, to eggs, to salads and it just keeps getting better and better. Plus, this is one of the few buffalo sauces I've found with no added garbage---huge win! So finally after months of hoarding this recipe that combines 3 of my favorite things {Frank's, chicken, and blue cheese} I thought it was about time I shared one of my favorite egg bakes of all time!
I am all about having easy breakfasts all prepped and ready to go, so that in the morning I can just {grab and go}! I frequently find myself whipping this dish up on a Sunday afternoon so that I have a pre-made, delicious and nutritious breakfast waiting for me all week long!
Buffalo Bleu Cheese Frittata
Ingredients:
· 12 eggs
· 4 Chicken Breasts, thawed
· 2/3 C. Bleu Cheese Crumbles
· 1/2 C. Green Pepper, diced
· 1/2 C. Green Onions, chopped
· 1/3 C. Franks Red Hot
· 1 Tsp. Sea Salt
· 1 Tsp. Black Pepper
· 1 Tsp. Garlic Powder
· 1 Tsp. Onion Powder
Methods:
1. Preheat the oven to 375 degrees
2. Arrange chicken breasts flat on a baking sheet and place into the oven
3. Bake for 20-25 minutes {or until the internal temperature of the meat reaches 360 degrees}
4. Remove chicken from oven and allow to cool (leave the oven on}
5. Once cooled, shred with a fork a place into a medium bowl
6. Add the Franks Red Hot and stir, ensuring to coat the chicken evenly
7. In a large bowl add the eggs and all of the seasonings, combining well
8. Then mix in the chicken, green peppers, green onions and bleu cheese, taking care to stir thoroughly
9. Place the mixture into a hot cast iron pan and cook on the stovetop for 5-10 minutes {or until the edges begin to set}
10. Then carefully transfer the pan to the oven and cook for another 10-15 minutes {or until the eggs are cooked through}
11. Remove from oven + let cool
12. Top with green onions and bleu cheese crumbles
