Paleo Cream Of Mushroom Soup
Say “Good-bye” to the processed, artificial-ingredient-filled canned soup you’re used to buying off the grocery store shelf and “Hello” to this gluten and dairy free substitute that is far better tasting!
I can hardly believe that it is Thursday already, this week is flying by, but I am 100% OK with that, especially because the forecast for the weekend here in Minnesota finally looks like actual spring! They are talking mid 70’s and I’m double-crossing my fingers in hopes that the last of our wonderful wintery temperatures are gone for good and nothing but summery sunshine awaits us throughout the next several months!
Even if I absolutely hate the cold and might complain moderately complain about it all throughout the winter, one of the best things about this chilly, snow-covered season is that it is 100% acceptable to eat soup 7 days a week, 3 meals a day {if you want—which I do}. This past winter, I posted multiple different styles of soup recipes as part of my January Soup Series including: Southwestern Paleo Chili, Ham Bone Soup, Sausage + Kale Soup and Chicken Vegetable Soup. All recipes were a staple in my household throughout this winter, but I forgot to include one of my absolute favorite soups! Not only is this soup filled with bold, creamy flavor, but it is absolutely a must-have when creating many of the infamous {Hot Dish} recipes that we Minnesotans have up our sleeves.
So in honor of the beginning of the warm season, and the ending of the cold season, I’ve decided to share one last soup recipe with you!
This cream of mushroom soup is simple, delicious, and so much healthier than the canned soup you buy at the grocery stores! This crucial ingredient to hundreds and hundreds of delicious home-style dishes, brings homemade to a whole new level. There are no preservatives, no vegetable oils, no chemicals, nothing but whole, real food ingredients that truly nourish your body and leave your taste buds in awe!
Paleo Cream Of Mushroom Soup
Ingredients:
· 16oz. Diced Mushrooms
· 1 C. Full Fat Coconut Milk
· 1C. Beef Broth
· 1 Yellow Onion, Diced
· 2 Tbsp. Ghee
· 3 Garlic Cloves, Diced
· 1 Tsp. Thyme
· 2-3 Tbsp. Arrowroot Powder {To Thicken}
· Sea Salt + Pepper To Taste
Methods:
1. In a food processor or blender, finely dice the onion, mushrooms and garlic {All separately} then set them each aside in their own dish
2. Then in a large stockpot heat 1 Tbsp. of ghee and add the onions, cooking until just translucent{around 5 minutes}
3. Add in the 2nd Tbsp. of ghee and the mushrooms and cook for another 5 minutes
4. Stir in the diced garlic and allow the whole mixture to cook for 2 more minutes
5. Next, add in the coconut milk and beef broth, stirring until well combined
6. Season with thyme, salt and pepper and bring to a boil
7. Simmer on the stovetop for 45 minutes
8. Using an immersion blender, blend the soup until smooth
9. And that’s all!
{Side note: If you are using this for a hotdish or casserole of some sort where you may want it a bit thicker, mix together 1 Tsp. arrowroot flour and 1 Tsp. water and slowly whisk this into the soup}
This is a simple, healthy, low ingredient option for one of those {staple items} that always seems to wind up in your cupboards! So keep this recipe on hand so you can easily access it next time you’re making craving the classic Minnesotan {Hot Dish} and now get outside and enjoy this beautiful weather!
