And we're back!

Monday is here greeting us with the early morning alarm once again, but only 1 more week and then it’s daylight savings! This is an exciting time for early risers, because nobody really enjoys getting out from underneath the covers when it’s still dark out and now we won’t have to any more!

This weekend we had Austin's brother in town and Friday night we took him to The Rookery {which I highly recommend} for a belated birthday dinner. Their current menu is amazing and included a mouthwatering kale, bacon + soft boiled egg dish that I'm dead set on reproducing for the blog, so keep your eyes peeled! I spent the rest of the weekend developing recipes, editing photos + doing some much needed housework. Am I the only one who works better in a clean environment???

I did squeeze in some {Me Time} as well and was able enjoy a movie night with the boys on Saturday and Sunday afternoon {when the weather was absolutely perfect} I went for a run + grabbed coffee to learn more about a volunteering opportunity for a great cause! I'm totally digging this {Pre-Spring Warmup} we've been having here lately + am excited to say that all the snow has officially melted from our yard! Whoop, whoop! Summers on the way!

 

Needless to say, the weekend went way too fast {as per usual} and by last night I just wasn't in the cooking mood but knew I needed something to bring to work today for breakfast.

So what did I do?

I grabbed some fresh berries, chia seeds, maple syrup, almond + coconut milk and blended it all together. I tossed that jazz in a jar, threw it in the fridge + in the morning my breakfast was ready.

Did you hear that? Less than 5 minutes and in the morning I had a healthy, real food breakfast just waiting for me to dip my spoon into it!

Berries ‘N” Cream Chia Seed Pudding

Ingredients:

·       1C. Fresh Berries

·       1C. Unsweetened Almond Milk

·       ½ C. Chia Seeds

·       ½ C. Full Fat Coconut Milk

·       2-3 Tbsp. Pure Maple Syrup

 

Methods:

1.     Add everything into a food processor + blend thoroughly

2.     Empty the contents into a jar {or other air tight container} and chill in the refrigerator overnight

3.     Top with fresh berries, bananas, nuts or seeds

4.     And that’s it!
