Balsamic Roasted Beets + Broccoli

Oh my gosh, it’s Monday already! The thing is that I honestly don’t even care because this weekend was so amazing! Here in Minnesota, it was almost 60 degrees on Saturday and everyone {including myself} took full advantage of this February Heat Wave!

Roasted Vegetables, Roasted Broccoli, Beets, Balsamic Vinegar, 

Saturday started out with a coffee/work session at my favorite local coffee shop, Spyhouse Coffee {if you haven’t been here yet, I’d definitely put it on your To-Do list}. After a few solid hours of work, Austin and I headed to an indoor farmers market and spotted one of our favorite gluten free donuts made by Sift Gluten Free Bakery. They had a new {Grapefruit and Cardamom} donut flavor, so obviously we had to grab a little afternoon snack! We ran a few other errands around town and then headed home to enjoy the amazing weather!

First, we laced up our Asics + headed out for our first official outdoor run of 2016 at a nearby park. The park was overflowing with people, their kids and their dogs, all with smiles on their faces and so stoked to be able to finally escape from the house after all of these months of winter! Once we landed back at home, we grabbed the bikes from the rafters of the garage, pumped up the tires, and headed out to explore some new trails and neighborhoods. It felt so good to finally be able to soak up some natural sunlight and Vitamin D! There’s just something about being active in {The Great Outdoors} that makes me light up like a Christmas tree.

It’s days like Saturday that make it REALLY hard for me to want to do anything inside, especially spend hours cooking and doing the dishes. And although this past weekend may have been a little bit of a  {Spring Teaser} as we still have a few weeks until spring officially arrives, I know that days of warmer weather and lots of sunshine are not too far away! It’s for that reason, that I’m starting to focus on recipes that {although still made with real ingredients} take as little time as possible in the kitchen! And to start things out, we have a quick and easy paleo vegetable side dish!

This Balsamic Roasted Beets + Broccoli recipe is the perfect addition any beef, pork, or poultry entrée you can think of!

Balsamic Roasted Beets + Broccoli

Paleo Recipes, Real Food, 21 Day Sugar Detox, Sugar Free, Dairy Free, Grain Free, Paleo Broccoli

Ingredients:

·       2-3 Raw Beets

·       3-4 Broccoli Stalks

·       ¼ C. Olive Oil

·       C. Balsamic Vinegar

·       1Tsp. Sea Salt

·       1Tsp. Black Pepper

Methods:

1.     Preheat the oven to 350 degrees

2.     Line a baking sheet {or 2} with parchment paper

3.     Peel and slice the beets and place them into a large bowl

4.     Chop the broccoli and add it to the beets

5.     Drizzle the olive oil and balsamic vinegar over top the vegetables and then add in the sea salt and pepper

6.     Stir thoroughly to ensure all veggies are well coated

7.     Spread the vegetables in a thin layer on the baking sheet

8.     Bake for 15-20 minutes {depending how crispy you like your veggies}

9.     Remove from the oven and allow them to cool 2-3 minutes before serving

10.  Enjoy!
