Overnight Blueberry French Toast Bake
This gluten free, dairy-free and refined sugar free french toast bake is a super simple way to ensure that everyone at your table is happy. Whether it's a cabin weekend, Mother's Day or a family birthday, you just can't go wrong with this dish.
The fact that Memorial Day weekend is right around the corner gives me all of the heart eyes! This long weekend could not be any more needed by myself, my family and I’m guessing the rest of the world as well. It’s always a hard push when you come off of the Christmas holiday and have to grit your teeth {through cold ass days for those of us Minnesotans} for 5 more months before we have another holiday weekend to step away from our desks and recharge. But, no matter how long those 5 months have been… IT’S FINALLY HERE!
Idk about the traditions for those of you in other states but here in MN, we’re all about the lake life. Cabins, tents, boating, hiking, campfires, s’mores {OMG-good reminder that I need to get stuff for s’mores}, flannels, chacos, family, friends and hopefully a VERY limited use of technology because being present and enjoying the beauty of nature around us is too cool to be spending time with our noses stuck in our phones.
Austin and myself are heading up to the North Shore for the 4th year in a row {check out my favorite hiking spots here} with some kick ass friends to live out of a tent, enjoy ALL of the above items and get away from the city for a few days. We cook all of our own food and still keep our food REAL but we do add in {special treats} like s’mores, brews and vino. Our campfire breakfasts usually look like eggs, hashbrowns, bacon or some kind of veggie skillet because obviously we don’t have access to an over BUT if you’re vision of relaxation has nothing to do with tents and everything to do with a real bed, indoor plumbing and a full kitchen, I’ve got the perfect breakfast dish for you and your loved ones this weekend!
Prep this gluten free, dairy-free and refined sugar free dish the night before, wake up, pop it in the oven and within a few short minutes you’ll not only have the best smelling cabin on the lake, but a breakfast that will have all of your guests asking for seconds.
OVERNIGHT BLUEBERRY FRENCH TOAST BAKE
Servings: 10-12
Ingredients:
For the french toast bake:
4C. Fresh Blueberries
1 ½ - 2 Loaves Gluten Free Bread, cubed
8 Eggs, beaten
2C. Almond Milk
½ C. H2O
2 Tbsp. Raw Honey
1 Tbsp. Coconut Oil
1 Tsp. Pure Vanilla Extract
Maple Syrup {for serving}
For the topping:
2 C. Mixed Nuts, raw {I used pecans, almonds and macadamia nuts}
¼ C. Butter, softened
2 Tbsp Coconut Sugar
2 Tbsp. Cinnamon
1 Tsp Pure Vanilla Extract
Methods:
Spray a 9x13 baking dish with coconut oil
Spread bread cubes evenly throughout the dish
Add eggs, milk, vanilla, and cinnamon together in a medium sized bowl-- beat well
Pour mixture over bread cubes
Then, add 3C. blueberries , H2O and honey to a blender/magic bullet, blend until a smooth syrup is made and then pour over bread
Spread the remaining blueberries over top of the bread, cover with aluminum foil and refrigerate overnight {8 hours}
In the morning, preheat the oven to 350 degrees F and allow the dish to bake for 30 minutes covered
While it’s baking add your nuts to a blender or food processor and pulse until you’re left with a chunky mix
Empty the contents of the blender into a small bowl with cinnamon, vanilla, coconut sugar and butter and mix well
After the dish has baked for 30 minutes, sprinkle the topping mixture on top and bake uncovered for another 20 minutes or until cooked thoroughly
Serve with maple syrup and ENJOY!
