Everything Breakfast Muffins

Happy Monday to you all once again, I can’t even believe it’s already the start of a new week! My weekends feel almost non-existent anymore, but I’m guessing that’s a common feeling among most people so who am I to talk. If only I had a 3 {or even 4} day weekend on the regular… Maybe someday;)
Anyways... my weekend went a little something like this.
Saturday morning started with a cup of coffee and about 45 solid minutes spent wrapped in a blanket reading Elizabeth Gilbert’s {Big Magic}. I love reading, but am struggling to find time to step away from my continually lengthening to-do list and actually turn some pages, so this was a magical morning for me. I recently joined a book club and although I may not finish the entire selection for the month prior to our meetings, it has been introducing me to some really great pieces and motivates me to make reading more of a priority. Back to Saturday’s events, after my coffee was finished I headed to the gym because oddly enough, I’m really loving Saturday workouts {I used to be a Monday-Friday girl only} .The rest of the afternoon was filled with errands and such with the bf. Later that evening we headed to a birthday party for a close friend + ended our evening with a lots of laughter, good company, and maybe a few gluten free ciders.;)
Sunday {Valentines Day + My Mom’s Birthday} was chill for the most part as we don’t usually plan too much for the day. We worked on some things around the house, did a little bit of recipe creation, and then went ice-skating at an outdoor rink in this amazing 20-degree weather we’ve been having here in MN! It was cold + I’m by no means Kristina Yamaguchi, but there’s just something about ice skating that makes me smile. We cooked a delicious dinner and finished off the night with some banana ice cream and dark chocolate!
Personally, ever since I started following a Paleo diet I really haven’t struggled with the temptations brought around during the holidays. However, I do remember a time where I longed for nothing more than Reese’s Peanut Butter Hearts and when my mom or friends would lovingly gift them to me, I would demolish the entire bag within a few days. I vividly remember purposely hiding the bag in the back of my closet to avoid eating them and going back to find them again + again {just for 1 more} until the bag had been completely emptied. If that isn’t a clear sign of sugar addiction, I don’t know what is. Did I feel good after my indulgences? Not in the least bit, but the sugar kept me coming back for more.
Maybe you too have had experiences like mine, or maybe you still have those experiences and find yourself feeling uncomfortable, ill and or even regretful after the choices you made over the holiday. It’s ok it happens, what I recommend is learning from your mistakes, really acknowledging what happened and why you chose to eat the foods you did, how you felt afterwards, and engraining that feeling in your memory so you don’t repeat the same things next time. Then it’s time to look to the future and to get yourself back on the right track with delicious real food meals, made from the highest quality, unprocessed, natural ingredients possible.
To start the week back off on a strong note, I thought sharing a quick + easy breakfast recipe that can be prepped early in the week and eaten for the remainder was more than fitting.

Everything Breakfast Muffins
Ingredients:
· 10 Eggs
· 2 Tomatoes, diced
· 1 Green Pepper, diced
· ½ Onion, diced
· ½ Box of Mushrooms, diced
· ½ Can of Black Olives, diced
· 1 Tbsp. Fat {Ghee, Coconut Oil, Bacon Fat, Etc.}
· 1 Tsp. Sea Salt
· 1 Tsp. Black Pepper
· 1 Tsp. Garlic Powder
· 1 Tsp. Onion Powder
Methods:
1. Preheat the oven to 350 degrees
2. Grease a large muffin tin and set aside
3. Add the onions, green peppers, and your choice of fat to a large skillet
4. Sauté the vegetables until they begin to tender
5. Then add in the mushrooms, tomatoes and black olives and cook for another 3-5 minutes
6. While the vegetables finish cooking, crack all 10 eggs into a large bowl
7. Stir in all seasonings and mix thoroughly
8. Remove the vegetables from the heat and add into the egg mixture
9. Stir everything well and divide into the individual muffin tins
10. Place in the oven and bake for 15-20 minutes or until cooked through
11. Allow to cool before refrigerating and ENJOY!
