Homemade Paleo Mayo
-Healthy, Homemade Mayonnaise that can be made in less than 10 minutes!-
Welcome to Monday friends! I’m sure everyone is so excited that the weekend is over + you’re back to the busy work week schedule {Ha! Maybe not…} but I have something SUPER exciting to share with you today, so hopefully this brings some happiness to the beginning of your week.
I have a confession, I spent basically my entire life believing that Miracle Whip was actual Mayonnaise. {This is 100% the truth} I had no problem with the taste of the tangy spread + admittedly I thoroughly enjoyed it as an addition to certain foods such as sandwiches, French fries and many different salads. However once I grew older and became more aware of/interested in the ingredients that I was putting into my body, I realized that I had been greatly mistaken about what exactly Mayonnaise truly was.
If you grab a jar of {Miracle Whip} off of the shelf in the grocery store and flip it over, you will find that the main ingredients include: water, soybean oil, vinegar, high fructose corn syrup, sugar, modified corn starch, and dried egg.
Say Whhhaaaattt?!?!?
This was my exact thought when realizing that soybean oil + high fructose corn syrup were primary ingredients in something that I had been consuming on an apparently all-to-frequent basis. So, upon this realization I immediately ceased use of this product and for many months went completely without a substitute. That is, until I found out that there was a way to make real, homemade, healthy mayonnaise with only 4 whole food ingredients, an immersion blender + 10 minutes.
After tasting this recipe for the first time I was in awe and immediately fell in love! This tasted nothing like the Miracle Whip that I was used to using as a mayonnaise dressing in my past, it was so much better! I cannot believe that I had been missing out on this for so long, but am thrilled that I now found it because it has been and continues to be a staple in my refrigerator. This is the perfect condiment to any burger, dressing to a chicken salad, or dipping sauce to chicken fingers.
And remember, it only takes 10 minutes to make!
Homemade Paleo Mayo
Ingredients:
· ¾ C. Light Olive Oil
· 1 Egg, room temperature
· 1Tbsp. Lemon Juice
· 1Tsp. Ground Mustard Seed
Methods:
1. Combine the egg, lemon juice + mustard seed into the base of an immersion blender
2. Begin blending the ingredients
3. Slowly start to pour in the olive oil while continuing to blend {I find that using a liquid measuring cup is easiest for pouring}
4. Over the next 3 minutes slowly add the remaining oil and blending as a thick sauce forms {Be cautious not to add too much oil or too quickly as this will ruin the emulsion}
5. Once all oil is added + mixed thoroughly you’re done
6. Be sure to store this in an air tight container in the refrigerator
