Sausage + Kale Soup

-This delicious paleo soup recipe is the perfect way to stay warm + toast throughout the winter and get your greens for the day!-


It's the last week in January + that means 2 things: 1) Slowly but surely spring is coming {I'm more than ready for the snow to be gone + temperatures to warm as I've been itching to get running again-- I'm not a fan of winter time running} and 2) It's the last week of my January Soup Series!

Over the past month, the January Soup Series has included: Southwestern Paleo Chili, Chicken Vegetable Soup + Ham Bone Soup and now it's time to round out the group with a soup the ensures you're getting your green veggies into your days!

Kale is vegetable powerhouse that's high in fiber, magnesium, folate and many other vitamins and minerals that are necessary for optimal health. For these reasons {and many others} kale is one of my latest obsessions. Lately my favorite way to eat it is by adding it into soups or sautéing the plant thoroughly as this softens the sometimes fibrous {or tough} texture that initially deters people from the food. The addition of kale to soups is wonderful as the broth alone has an abundance of it's own benefits + the two together really add a giant nutritional punch to your diet. 

So without further hesitation, here’s another simple yet delicious and healthy recipe to help you to stay warm + nourished throughout these {sometimes grueling} winter months.

Sausage + Kale Soup

Ingredients:

·       3 quarts Chicken Bone Broth

·       1lb. Pork Sausage

·       3 Large Handfuls of Kale, stemmed

·       1 Yellow Onion, diced

 

Methods:

1.     Sauté the sausage in a medium sized skillet

2.     Once the sausage has been cooked about half way, add in the diced onions and continue to cook until onions are translucent

3.     In a medium sized stock pot, combine the sausage, onions, kale + bone broth

4.     Allow soup to cook over medium-high heat for 15-20min.

5.     Allow soup to cool 5 minutes prior to serving
