Gut healing chicken soup

I’ve got 1 word for you… BRRRRRR!

 These subzero temperatures here in MN have me craving some comfort food big time! I just want to wrap up in a blanket with a warm bowl of soup, a good book, & not have to leave the house until it warms back up. Unfortunately for me, I don’t have a job where I am able to work from home so unless I plan on using up all of my vacation time (not a chance) I don’t think I’ll be staying inside any longer than a few hours before I’ll have to venture back into the cold.  On the positive side, I already have some bone broth pre-made so a warm bowl of soup, a blanket, and a good book are definitely in the future for me.

 Lucky for you, it’s Wednesday, and that means that it’s time for me to share another amazing soup recipe with you! I just so happened to choose Chicken Vegetable Soup for this week, which is made with my homemade chicken bone broth & is filled with endless amounts of minerals and nutrients to keep your immune system nice and strong as we battle through the bitter cold! Plus, if chicken soup isn't a comfort food, I don't know what is!

Chicken Vegetable Soup

Grain free, gluten free, dairy free, chicken vegetable soup


·       10C. Chicken Bone Broth

·       1 ½ C. Raw Carrots, sliced

·       1 ½ C. Mushrooms, sliced

·       1C. Celery

·       ½ Red Onion

·       1lb. Chicken, diced

·       1 ½ Tbsp Sea Salt

·       1Tbsp Black Pepper

·       1 Tbsp Parsley

Paleo Chicken Bone Broth Soup


1. In a large stockpot on the stovetop add the chicken, 1 Tbsp salt, 1Tbsp pepper, and enough water to fully submerge the chicken

2. Cook over medium-high heat for 35-45 minutes, or until the meat is easily removable from the bones

3. Remove the chicken from the water and allow to cool

4. In another medium sized stockpot, combine the broth, celery, onions, and the remaining salt and pepper

5.  Allow to cook on medium-high heat for 15 minutes

6. Next, add in the carrots and cook for another 20 minutes

7. Meanwhile, you can be 'deboning' the chicken and preparing to add it into the soup

8. Once the carrots and celery have softened, it’s time to add in the chicken, mushrooms, and parsley

9. Cook soup over medium heat for the final 10 minutes

10. Remove from heat and let stand 5-10 minutes before serving

11. Use caution when consuming, as the liquid will be very hot

12. ENJOY!
