Let’s just call it like it is shall we? You’re not here to read through my 2020 overview [is anybody looking forward to reading ANY of those?!] or my dreams and aspirations for 2021… you’re here for a recipe and that’s it so the sooner you can find the ingredient list the better… #amiright?! 

This paleo cheeseburger hotdish [yes, I’m from MN and this is what we call it] is easy AF and gluten, grain and dairy free has been one of my top recipes over on the ‘gram so I know for a fact it’s a goodie [and also because I’ve eaten it approximately 75 times in the last year]. I’m pumped for y’all to try it for many reasons but mostly because I cannot wait to hear your thoughts on my soon-to-be-famous friendship sauce!!

EASY PALEO CHEESEBURGER HOTDISH

{Printable Recipe}

Servings: 4-6

Ingredients:

  • ½ White Onion, diced

  • 1 Bag Cauliflower Rice, frozen

  • 1lb Ground Beef

  • 1 Bunch Spinach, chopped

  • 2 Medium Pickles, sliced

  • ½ Can Full Fat Coconut Milk

  • ½ C. Nutritional Yeast

  • 2 Tbsp. Avocado Oil

  • 1 Tbsp. Sesame Seeds

  • Thyme, S & P to taste

(For The Friendship Sauce)

  • 4 Tbsp. Mayo [I used homemade] 

  • 2 Tbsp. Ketchup [I used Primal Kitchen]

  • 1 Tbsp. Yellow Mustard [I used Primal Kitchen]

  • 1 Tsp. Coconut Aminos

Methods:

  1. Heat skillet to medium heat

  2. Add avocado oil to skillet

  3. Once the oil is hot add onion and a pinch of salt. Cook until onions begin to brown.

  4. Then add in ground beef and cook until almost all of the pink is gone.

  5. While the beef is cooking, combine all of your sauce ingredients together in a small bowl and set aside.

  6. Next add the cauliflower rice to the beef and cook until heated through.

  7. Add the spinach, cook until wilted then add the coconut milk, nutritional yeast and seasonings. Cook until well combined.

  8. Once complete garnish with sliced pickles, friendship sauce and sesame seeds if you choose. 

  9. ENJOY!
