Paleo Peppermint Mocha
-The perfect paleo beverage to enjoy next to the tree on Christmas morning!-
It’s finally the week we’ve been waiting for all year and Christmas is literally 4 days away! My schedule for the next week is crazy busy and filled with lots of traveling, friends, and family but I couldn’t care less because it is all worth it to be with the ones you love throughout this magical time of year.
I was fortunate enough to have begun my holiday festivities a bit early this year since we celebrated Christmas with my family this past weekend. We (Austin & I) hosted my mom, dad, and brother at our place in Minneapolis and began Saturday evening with a wonderful dinner at the Butcher & The Boar, a Minneapolis favorite that serves craft food, beer, and bourbon. Following our dinner filled with delicious cocktails, oysters, some of the best cuts of meat I’ve ever tasted, we headed to ACME Comedy Club to complete our night with lots of smiles and laughter. In the morning we cooked a mouth-watering paleo brunch complete with gluten free blueberry waffles, bacon, sausage, & eggs and then Santa stopped by with a few gifts for us all;)
This weekend has set the tempo for my upcoming week and I cannot even contain my excitement! Don’t ask me how I’m going to focus at work the next 3 days, because quite honestly, I have no idea.
What I do know, is that in addition to the excitement I have about spending quality time with those I love and getting a much needed break from my day job, I am stoked to be able to wake up on Christmas morning and recreate this Paleo Peppermint Mocha recipe that I recently fell in love with! With all natural, non-processed ingredients, this festive holiday beverage surpasses many, if not all others, in both flavor and quality! The fact that this Paleo Peppermint Mocha can be easily created in your own home and enjoyed with your favorite PJs on and hair tied high in a messy bun, is just an additional perk!
Ingredients:
- 8oz strongly brewed coffee
- 1/2C. Coconut Milk, full fat
- 1 1/2 Tbsp Cocoa Powder, unsweetened
- 1 Tbsp Raw Honey
- 3 Drops Peppermint Extract
Methods:
- Brew coffee (I like mine about double the strength I usually have it).
- Add all ingredients into a medium sized sauce pan on the stove.
- Turn heat on low and heat liquids, stirring occasionally, until well combined. Do not let boil.
- Blend ingredients for 20-30 seconds with an immersion blender.
- Transfer into your favorite holiday mug, take a seat next to the fire, and enjoy!
