Blackberry Pomegranate Spritzer

Every year the holidays go by faster and faster, and this year undoubtedly continued with that trend. We had 5 Christmases total and lots of traveling in between so although I was out of the office for the long weekend, it was hardly a vacation. Thankfully I have only have 2 work days left this week since I get Friday off for New Years Day! Woohooo!!!
It seriously still blows my mind that we will be welcoming the year 2016 in only a few short days!
For some, the most exciting part of the New Year is deciding which New Years Eve party to attend (& for us ladies, what we will wear). Crowds of people fill every venue from nightclubs, to restaurants, to comedy shows on this celebratory night. Bottles of champagne are popped, glasses are raised, and kisses are shared in honor of one year passing and another beginning.
Whether you’re the type who enjoys going out and living it up or if you prefer staying in for a relaxing evening with your loved ones, New Years Eve usually involves some celebratory cocktails. I enjoy a good cocktail just like anyone else, but rail liquor and sugar filled mixers are just a flashback to my college years, which no longer interests me in any way. I initially was going to choose a good wine for the evening, but thought that since I drink that pretty regularly (once a week) I needed something I bit more unique for a holiday such as NYE.
I spent a few nights playing around with some of my favorite sparkling water (LaCroix), some fresh fruit, and a bit of Vodka before I finally came up with the perfect NYE drink recipe. It is delicious beyond all means, but what's even better is that there is no added sugar, no artificial flavorings or colors, and it's super simple to make!
Here's the recipe so you too can enjoy it as we welcome the year 2016!
(Makes 1 Drink)
- 1/2 Can Lime Lacroix
- 1/8 C. Pure Pomegranate Juice
- 5-6 Blackberries
- 1 shot Vodka
- 1 Tbsp Lime Juice, fresh
- 1 C. Ice
- Place the berries in your choice of drink glass (These worked well for me)
- Mash them with a fork until desired consistency
- Fill the glass with ice
- Add in the pomegranate juice, lime Lacroix, and lime juice
- Mix all ingredients well and let chill 1-2 minutes
