3 Ingredient Almond Butter Cookies
-A grain free, gluten free, dairy free cookie that can be made in less than 15 minutes? What more could you ask for?-
I’m super excited today because Christmas {one of my favorite holidays of the year} is a mere 9 days away but, more importantly because I’m sharing one of the easiest, most delicious paleo cookie recipes I have ever created! So for all of you who think that gluten free, grain free, and dairy free recipes are too time consuming and bland tasting… listen up, this ones especially for you!
I’ll be honest with you when I say that personally, I’m not much of a baker and my creations are rarely even edible. Over the years I’ve come to realize that my lack of baking skills can be attributed to three reasons:
I hate following recipes and am constantly forgetting or eliminating ingredients, however baking is a type of ‘art’ & when details are removed from a masterpiece the end result can be a flop.
I simply do not have the patience to stand next to the oven and closely monitor cookies, cakes, or any other dessert for that matter, for an extended amount of time. It is for this reason, I subject my family to baked goods that are overdone the majority of the time.
Although I eat real food/paleo diet, I still have a sweet tooth that is not afraid to take control when given the opportunity. Therefore, I prefer to stick with the motto ‘out of sight, out of mind’ and by out of sight I mean not in the house.
However, this recipe is good {SO GOOD} and it took less than 15 minutes total AND I aced it on the first attempt! If I can do this anybody can, trust me!
Ingredients:
1 Large Egg
1C. Almond Butter
1C. Coconut Sugar
1/2C. Enjoy Life Dark Chocolate Chips, optional for decorating
Methods:
(For the cookies)
Preheat the oven to 350 degrees
Combine the egg, almond butter, and coconut sugar in a medium sized bowl and mix until well combined (It may be difficult to stir at first, but do not heat it up)
Roll into small dough balls and place them onto a parchment lined baking sheet (The dough will spread, so space them 2-3inches apart)
Bake for 6-10 minutes or until the edges begin to brown
Remove from heat and let cool
(For the drizzle)
Add the chocolate chips into a small, glass bowl
Heat in the microwave for 20-30 seconds, or until the chips have almost fully melted
Carefully empty the chocolate into a ziplock baggie, gathering it all in one corner
Cut a very small hole in the corner without the chocolate, then transfer the liquid to the corner with the slit
Decorate your cookies with whatever creations and designs you choose
Then let the chocolate harden before stacking these for storage
Enjoy!
