Beet-Berry-Banana Smoothie Bowl

This Beet-Berry-Banana Smoothie Bowl is filled with veggies, fruit, protein, healthy fats and I promise it will tide you over until lunch with no mid-morning snacks needed.


It is just me or has this summer FLOWN by?! But really, I feel like I was just planning my annual camping trip to the North Shore over Memorial Day and now here I am planning out Labor Day weekend… unreal. It’s always hard to start to watch summer slip away as the temperatures begin to drop and the leaves on trees start to change {yes, this is actually been happening here in mpls for over a week}, but it’s also a very exciting and busy time for most because school is starting up all over again!

Lucky enough for me, I no longer have the luxury of enjoying {summers off} and really haven’t since I was oh… 12 years old and started working, but for all of the students, parents and teachers out there who DO have this opportunity, life is about to get CRAY.

Let’s be honest here… trying to get myself out of bed in the morning, fed a nutritious breakfast and into work on time looking halfway presentable is a real FREAKING challenge most days. Now add in 2 dogs who are demanding AF and brewing a chemex full of coffee {yes, this is necessity because I’m 1000% a coffee snob} and that puts me at a usual 10 minutes behind schedule for nearly every single day. But, guess what? I still make it to work, I still get to enjoy the best coffee every day and my dogs are still alive and crazy--so that’s a win in my book.

What REALLY blows my mind though is the thought of having to do all of that… WITH KIDS. Like how TF do parents do it?! My only rationale for this is that the day you land the title {parent}, however that comes to be… you are magically blessed with super-powers that allow you to overcome the inevitable-- I mean how else do you do the aforementioned with a screaming baby and a toddler throwing a fit because he doesn’t want to change out of his pajamas?

Regardless of if you’re prepping yourself for the school day or yourself and 4 little minions running around, there’s no denying that breakfast needs to be easy peasy or there’s a good chance that it won’t happen at all. My creation is actually something I’ve been devouring on-the-run all summer long, but hot damn is it tasty, filling, nutritious and sooo darn pretty! This Beet-Berry-Banana Smoothie Bowl is filled with veggies, fruit, protein, healthy fats and I promise it will tide you over until lunch with no mid-morning snacks needed. Toss everything in your nutribullet, blend and you’re out the door!

BEET-BERRY-BANANA SMOOTHIE BOWL

Ingredients:

  • 1 ½ C. Almond Milk, unsweetened

  • 1C. Mixed Berries, frozen

  • 1 Banana, frozen

  • ½ C. Beets {frozen or fresh}

  • ½  Avocado

  • ¼ C. Collagen

 

Methods:  

  1. Add everything to a blender or food processor

  2. Blend until smooth

  3. Top with fresh fruit, cacoa nibs or my dark chocolate mocha grain free granola

  4. ENJOY!
