Gluten Free Strawberry Banana Donuts

Valentines Day is in T-72 hours so I hope you’re ready for the {Love Struck} social media takeover that’s about to take place. Whether it’s sweet treat recipes headlining your favorite blog, florists bombarding you with adds, or your friends + family sharing the infamous couple selfie along with all of the reasons why they {Love} their significant other, it’s time to prepare yourself.

Gluten free, grain free, flour less, dairy free, donuts, paleo, primal, real food, 

When it comes to this certain red infested, lovey-dovey, chocolate wasted holiday, I’d say people usually have 1 of 4 emotions towards it…

1.     You’re single + not a fan: this is the 1 day of the year you dread more than any other. Watching people shove their {apparent happiness} in your face for an entire 24 hours gets real old, real fast.

2.     You’re too good for it: When asked about Valentines Day your response tends to be as cliché as it gets {Why do we need a holiday for this? We should be celebrating our love all year long}.

3.     You’re love struck: You’ve waited all year for this day + have gone all out planning the most romantic evening with you boo equipped with chocolates, a candle lit dinner, and champagne.

4.     You’re like me: You don’t go wild over the holiday, but you at the same time you don’t mind having {a little love in the air}

I want to make it very clear that I’m not saying any one of these 4 emotions are right or wrong {because they’re not} I’m just saying that the majority of the population is going to fit into one of these categories.

No matter what your opinion is on the holiday, I think we can all agree that come Sunday morning, a nice brunch is something that we would not be opposed to.  It is for that very reason {and because basically everyone I know loves donuts} that I created the following recipe for all of you to enjoy over the upcoming weekend. These donuts might be gluten free, grain free + dairy free but they are nothing short of amazing. Seriously, they are some of the best paleo donuts that we’ve ever whipped up, EVER! So grab your apron + your ingredients and let’s get baking!

Gluten Free Strawberry Banana Donuts

                          Ingredients:

Coconut flour, Paleo diet, Strawberries, Banana, Tapioca Starch, Healthy Donuts, Low Sugar, Paleo Donuts

For the Donuts:

·       5 eggs

·       2 Bananas, smashed

·       1C. Frozen Strawberry Puree

·       1C. Coconut Flour

·       ½ C. Tapioca Starch 

·       ¼ C. Almond Milk, unsweetened

·       3 Tsp. Baking Powder, aluminum free

·       1 Tsp. Pure Vanilla Extract

For the Frosting:

·       1C. Freeze Dried Strawberries

·       ¼ C. Coconut Oil

·       ¼ C. Raw Honey

Methods:

1.     Preheat the oven to 350 degrees

2.     Use coconut oil or ghee to grease a donut pan

3.     Add all ingredients for the donuts into a food processor and blend until mixed thoroughly

4.     Fill the donut molds with the batter

5.     Place in the oven for 15 minutes

6.     As the donuts are baking, add the freeze dried strawberries to your {clean + dry} food processor

7.     Blend until it becomes a fine powder

8.     Then add in the coconut oil and honey, blend until smooth

9.     Once the 15 minutes is up, carefully remove the donuts from the oven and allow to cool

10.  After the donuts have cooled for 10-15 minutes,  you are free to frost them

11.  Enjoy!

 

 

 

Since I don’t obsess over the holiday, I honestly don’t even have set plans yet and I’m 100% ok with that. I wouldn’t mind just hanging at home in my Lululemon sweat pants with a glass of wine + a good movie, but we’ll see what Mr. Schachtner has up his sleeve.
