Maple Vanilla Granola

This is not your ordinary granola, it’s gluten, grain, and dairy free AND 100% paleo approved! This recipe is simple, cheap and sure to have your taste buds screaming for more!

So in the past few weeks I've had many people contact me looking for paleo granola options and while I do have some brands that I love dearly, such as:

·       Whole me

·       Bubba’s

·        Steve’s PaleoKrunch

·       PaleoNola

·       And some others I’ve stumbled across too!

I honestly like making my own the best! It's seriously so easy, it makes more, it's complete deliciousness and it’s cheaper too! Now I'm far from a grocery Nazi, in fact, over the years my grocery budget has actually increased! But I'm ok with that because I find it extremely important to nourish my body with high quality, non-processed foods, so I'm totally on board with paying the extra change that these foods may cost. Why? Because I haven't spent a dime {other than my insurance premiums} on anything healthcare related in years and I give ALL of the credit for that to my diet and healthy lifestyle. And on top of that, I feel and look the best that I ever have in my life, so I’d say it’s #totallyworthit. Doctor’s bills or grocery bills… you decide!

Ok, ok, rant over… but really, if the pre made granola is just not in your budget, try out this recipe! Like I said before it's complete deliciousness, so you might like it better than the store bought stuff anyways;)

Maple Vanilla Grain-Free Granola

                                  Ingredients:

·       3 Eggs

·       2C. Raw Nuts {I used walnuts + macadamia nuts}

·       1C. Shredded Coconut, unsweetened

·       1C. Raw pumpkin Seeds

·       1/2 C. Slivered Almonds

·       1/8 C. Maple Syrup

·       1 Tbsp. Cinnamon

·       2 Tsp. Sea Salt

·       1Tsp. Vanilla

·       1 Tsp. Vanilla Bean, Ground

Methods:

1.     Preheat the oven to 350 degrees

2.     Blend whole nuts in a food processor

3.     Add in slivered almonds and seeds, gently pulse until broken up

4.     In a small bowl, combine eggs and remaining ingredients, mix well

5.     Stir egg mixture in the blended nuts

6.     Spread the mixture evenly on parchment lined baking sheets

7.     Bake at 350 for 10-15 minutes, stirring every 5 minutes

8.     When mixture is golden brown, turn off the oven and prop the door open, leaving the granola inside to cool

9.     Store in an air tight container or jar in the refrigerator for up to 1 week

 

      I like to eat this straight up with almond milk + fresh fruit, on top of smoothies/bowls, or as the topping for my        Mocha Pecan Ice Cream!
