Pizza Lovers Egg Bake

Take a little time out of your day to throw this Italian themed dish together and you'll be you'll be looking forward to breakfast all week long!


Recently someone asked my what my favorite food was. My immediate thought was {oh this will be easy} but then it hit me… I like food a lot. Like a lot, A LOT. And you're asking me to choose only one?

I'm indecisive enough as it is, seriously though; shopping alone is only ever successful for me because of the invention of the camera phone and now snapchat. {So thank you technology, you're not all bad} There’s absolutely no way I'd be able to pick just 1 food, it's just not possible. Instead I came up with a list of my favorite FOODS {plural, not singular} and I'll be sure to share those with you shortly in another blog post.

But for the time being, I'll share one of the first foods that came to mind when creating this list and why!

Eggs. Yep, eggs. Straight up pastured raised, beautiful, brown, nutrient filled eggs. At first this might seem a little odd, but once I really sat down and thought about it, I use eggs for everything! Breakfast, baking, condiments, salads, burgers, EV.ERY.THING and I love it!

In fact, many times I’ve thought about how eliminating eggs would be the hardest part about following an AIP protocol. Sure I'm obsessed {really obsessed} with nuts, coffee and chocolate too, but do I eat them every single day? No. Are they the most nutrient dense foods for my body? The answer to both questions is “No” they aren't.

Eggs on the other hand are one of the most nutrient dense foods out there as they are high in protein, complete with all 9 essential amino acids, and contain at least 15 different vitamins and minerals.  However, you don’t even get half of the nutrition benefits from the egg unless you {Eat The Yolks} so please, eat the whole egg and none of this {egg white-B.S.} that still seems to be lurking around in many people’s diets. With that incredible nutritional content going for them why wouldn't I eat eggs as much as possible? Breakfast, Lunch + Dinner, gimme all the eggs!

And because I just shared my utter and complete love for eggs with you, I’m sharing one of our very favorite weekday breakfast recipes with you. Take a little time out of your day to throw this together and you'll be you'll be looking forward to breakfast all week long!

Grain Free, Gluten Free, Dairy Free, Easy, Simple, Paleo Egg Bake, Pizza Lover

Pizza Lovers Egg Bake

Black olives, onions, peppers, pizza toppings, paleo, paleo recipes, paleo breakfast

Ingredients:

·       1lb. Ground Pork Sausage

·       10 Eggs

·       1 Bell Pepper, diced

·       ½ Red Onion, diced

·       3oz. Black Olives, sliced

·       Real Mozzarella Cheese {optional: NOT paleo}

·       1 Tbsp. Coconut Oil

·       1 Tsp. Sea Salt + Pepper

{For The Pizza Sauce}

·       1C. Tomato Sauce

·       ¼ C. Tomato Paste

·       1 Tsp. Oregano

·       1 Tsp. Basil

·       1 Tsp. Garlic Powder

·       ½ Tsp. Onion Powder

·       ½ Tsp. Sea Salt

·       ½ Tsp. Black Pepper

Methods:

1.     In a medium sized skillet on the stove top, brown the pork sausage and set aside

2.     In the same skillet sauté the onions and peppers until soft, then add in the black olives and cook 1 more minute

3.     Whisk the eggs, salt and pepper together in medium sized bowl

4.     Then in a small bowl whisk together all of the {sauce ingredients} until well combined

5.     Use the coconut oil to grease an 8x11 Baking Dish

6.     Then layer the vegetables first, next the meat, the eggs, and finally the sauce

7.     Continue to do this until you’ve run out of ingredients {I like to end with the sauce on top}

8.     Bake at 375 degrees for 30-40 minutes, or until the center sets then remove from oven

9. Cut into single serving pieces and you're breakfast is ready to go as soon as you are the next day!
