Does anyone else feel like they are always on the go? Lately this is my exact feeling as I rush to my day job in the early mornings and bust my butt all day long, only to be required to put in extra hours daily because the work continues to pile higher and higher.  Once I’m actually able to punch out, I head to the gym {my safe haven} to try to relieve a bit of stress in a workout, then I continue home to grab a quick shower, scarf down dinner, just so I can pop open my laptop to get some work done on the blog, edit photos, answer emails or schedule social media posts for the upcoming days.  Additionally each week I instruct fitness classes, have conference calls with my 21-Day Sugar Detox clients, and find myself in meetings networking with other local professionals. On top of that I’m currently enrolled in LifeTime Academy’s Group Fitness Instructor Certification Program and have a wonderful relationship that deserves some serious quality time.

Needless to say, any short cuts I can take when it comes to meal prepping are GREATLY appreciated.

I’m not talking about fast food, dining out, or pre-made short cuts either {although I did write a post about my Paleo On-The-Go Options} for when you’re in a real pinch. While saying that my life is busy may be a slight understatement, I refuse to compromise my diet or exercise values because of it.  I still eat real food meals daily, am fully aware of every ingredient that enters my body, and find time for exercise a minimum of 5x/week.

 

This recipe is a weeknight dinner staple in our household, because it can go from start to finish in 30 minutes, tastes delicious with the combination of sweet + tangy and always leaves leftovers for meals later in the week!

Honey Mustard Glazed Chicken

Paleo Chicken Dinner, Healthy Recipes, Healthy Chicken Dinner, Vegetables and Chicken Recipe

Ingredients:

For the Chicken:  

·       1 Whole Chicken {cut into pieces or pre-cut}

·       1 Tbsp. Ghee

For the Honey Mustard:

·       ¼ C. Raw Honey

·       ¼ C. Dijon Mustard

·       1 Tbsp. Ghee

·       2 Cloves of Garlic, minced

·       1 Tbsp. Thyme

 

Methods:

1.     Preheat the oven to 375°

2.     Lie parchment paper on a 9x13 baking sheet

3.     Lightly coat each piece of chicken with ghee

4.     Place in the oven for 15 minutes

5.     While the chicken is cooking, add the remaining ghee to a small saucepan on the stove over medium heat

6.     Add in the minced garlic, cooking for 2 min.

7.     Then turning the heat to low, incorporate in the remaining ingredients, stirring frequently

8.     After the sauce is well mixed, remove from heat and set aside

9.     Once the chicken has cooked the initial 15 minutes, remove from the oven and thoroughly coat each piece with the honey mustard sauce

10.  Place back into the oven and continue to bake the chicken until an internal temperature of 165° F

11.  Remove from the oven and allow to cool before serving
