Maple Bacon Brussels Sprouts & Oven Baked Pecan Crusted Porkchops
"The best dinner you've ever had."
The beautiful cascade of brightly colored leaves, harvest season, and rapidly decreasing hours of daylight are fully upon us here in MN. Now that the cooler, fall weather has arrived it's time to start conjuring up ideas for cooking our meat indoors vs. outside on the patio. Don't get me wrong, I know a lot of people who stand in knee-deep snow in order to cook their dinner on the grill year round, however I realize that not everyone enjoys the winter elements quite that much. If you're like me and would rather spend your time indoors during the snowy months, this is for you! This 2 part recipe has all the excitement and flavor of a freshly grilled meal, without the sub zero temperatures and wet feet. I proudly present to you... Maple Bacon Brussels Sprouts & Pecan Crusted Pork Chops, quite realistically one of my favorite meals of all time!
We'll start with the pork chops as they take the greatest amount of time to cook.
Ingredients:
- 4 Pork Chops, Thawed
- 3 Eggs
- 3/4C. Tapioca Starch
- 3/4C. Pecan Pieces, Crushed
- 1Tbsp Salt
- 1Tbsp Black Pepper
- 1Tbsp. Ghee, Coconut Oil, or Animal Fat
Methods:
- Season the meat with S&P and let sit for 1-2 hours
- Preheat the oven to 400 degrees
- Grease a 9x13 pan with ghee, coconut oil, or animal fat
- Add the tapioca starch to a medium size bowl, then in another similar sized bowl beat the eggs together
- Dump the pecan crumbles into a 3rd bowl of the same size
- Take the raw meat and dip it first into the tapioca starch, making sure to coat it well
- Then dip the chop into the egg, covering completely
- Place the meat into the pecan mixture, coating both sides of meat thoroughly, then place into the pan
- Continue with the remaining chops
- Place the pan in the oven and cook at 400 degrees for 45min. or until the internal temperature of the meat reaches 145 degrees
Now, while the meat is cooking we'll make the Brussels Sprouts!
Ingredients:
- lbs Brussels Sprouts, Fresh
- 4 Strips Bacon
- 2Tbsp. Pure Maple Syrup
- 3Tbsp Ghee
Methods:
- Place bacon in a stove top pan and fry until crisp
- Remove the bacon and set aside
- Add the brussels sprouts and ghee to the pan, sauté until the brussels sprouts begin to brown
- Dice the bacon, then add this and maple syrup to the pan
- Cook it all together for 5-10 minutes
- Once the pork chops are heated to the appropriate temperature remove them from the oven
- Allow both the brussels sprouts and the pork chops a few minutes to cool, then... Prepare to be AMAZED!
Now run to the store and pick up all the ingredients so you can make these for your loved ones this weekend!
